Sweet Treats Under 300 Calories

Blueberry Pancakes

200 Calories per serving

Ingredients (Serves 6) 

◆ 140g plain flour

◆ 1tsp baking powder

◆ 40g caster sugar

◆ 150ml milk 

◆ 1 egg 

◆ ½tsp vanilla essence

◆ 1-2tbsp sunflower oil

◆ 200g blueberries

◆ 4tbsp maple syrup

1 Sift the flour and baking powder into a bowl. Stir in the caster sugar. Mix the milk, egg and vanilla together in a jug. Beat into the flour mixture and leave to stand for 5mins.

2 Heat a non-stick pan over a medium heat with a little oil. Add a tablespoon of batter and then leaving a gap add a second spoonful, to make two pancakes. When the pancakes begin to bubble, tum over and cook the second side until golden and risen.

3 Repeat with the remaining mix to make 12 pancakes, adding more oil, as necessary. Place on a plate and keep warm in a low oven, covered with foil.

4 To serve, place two serving plate, top with blueberries and drizzle with 2tsps maple syrup.

Ingredients (Serves 4)

◆ 4 nectarines 

◆ 50g pistachio nuts, chopped

◆25g amaretti biscuits, crushed

◆ 1tbsp light brown soft sugar

◆ ½tsp grated nutmeg

◆ 1 egg yolk 100ml rosé or white wine

◆ 100ml orange juice
