1 CAPITAL FUN 

Hobart, the state capital, is a compact, lively city. Framed by mountains and sea, it’s packed with markets selling fresh food and artisanal delights. Mona (Museum of Old and New Art) curates a striking blend of modern art and ancient heritage, set within a stunning contemporary building, hewn out of the cliffs.

Tasmania sits where three oceans meet, so you won’t find tastier seafood. Enjoy oysters, lobsters, salmon and sea urchins fresh from the sea. Stop by Blue Eye (blueeye.net.au) on Hobart’s waterfront, and dine in or take away fabulous fresh seafood. Sample its freshly shucked oysters with a squeeze of lemon for $2 (around £1) each between 3pm and 5pm, Tuesday to Saturday. They’ll be practically dripping with the salty waters they were plucked from that morning.
