Lamb kofta pitta pockets
SERVES 4
Using a spice paste adds loads of flavour to ordinary mince. You could also try cooking these on the barbecue for a smoky taste!
HOW TO DO IT
1 Put the lamb, breadcrumbs, spice paste and a big pinch of salt in a large bowl and mix well. Roll the mixture into 12 balls and thread 2 onto each skewer. Brush with a little oil, then heat a griddle or barbecue and cook the skewers over a medium-high heat for 5-6 mins, turning until cooked through and browned.
2 Meanwhile, for the salad, mix the cucumber, tomatoes, onion, olives and parsley in a large bowl. In a separate bowl, whisk together the oil, red wine vinegar, oregano and a good pinch of salt, then toss through the salad.
3 Stuff the warm/toasted pittas with some houmous, salad and the kofta.
TIP YOU COULD USE READY-MADE MEATBALLS, OR SWAP THE LAMB FOR LEAN BEEF MINCE.
