
Maple-Glazed Sausage Pops

SERVES 8
1 lb sweet Italian sausage, casings removed
1/4 cup flat-leaf parsley leaves, chopped
1/4 cup dill fronds, chopped
1/4 cup chives, chopped
1 Tbsp finely grated lemon zest
1 Tbsp pure maple syrup, plus more for serving
16 short skewers
1 Form into 16 patties, each 1/4 in. thick.
2 Cook patties in nonstick skillet on medium until golden brown and cooked through, 2 to 3 min. per side. Transfer to platter and brush with syrup. Insert skewers and serve with additional syrup.
Spring Crudités with Herbed Cheese Dip

SERVES 8
8 oz fresh goat cheese, at room temp
1/2 cup ricotta cheese
1 scallion, finely chopped
1/2 small clove garlic, finely grated
1/4 cup flat-leaf parsley leaves, chopped, plus more for sprinkling
1/4 cup mint leaves, chopped
2 Tbsp chopped chives, plus more for sprinkling
2 tsp finely grated lemon zest plus 2 Tbsp lemon juice (from 2 lemons)
Kosher salt and pepper
Crudités, for serving (we used radishes, carrots, endive, snap peas, and English cucumbers)
1 In food processor, pulse goat cheese and ricotta until smooth.
2 Transfer to medium bowl and fold in scallion and garlic. Fold in parsley, mint, chives, lemon zest and juice, and 1/2 tsp each salt and pepper.
3 Transfer to serving bowl and sprinkle with more parsley and chives if desired. Serve with crudités.
Egg Salad Blini Bites

6 large eggs
1/4 cup mayonnaise
1/2 tsp finely grated lemon zest plus 1 Tbsp lemon juice
Kosher salt and pepper
1/2 small red onion, finely chopped
2 Tbsp chopped capers
