WE’D all want to eat salad more often if the leaves were always fresh, crunchy and sweet. Unfortunately, we may have been put off by some miserable ‘hotel’ salad consisting of limp lettuce, a slice or two of flaccid cucumber, some tough tomato, a bitter radish and a long-time-since spring onion. The problem isn’t necessarily the lack of inspiration, but the sad ingredients.
