That’s the time I spend researching, staying up to date on global trends and fellow chefs that I admire, and reading blogs and papers. The easiest way to do all of it is on my phone.”

Cheung is enthusiastic about putting together a book someday, to share extensive records of the food he creates. “The only way to document is to take a picture of the mise en place, plating, and ingredients. I have hundreds of recipes, and they all go into the Evernote app, it’s the only way to keep track.”
