The kitchen is helmed by Chef Cataldo Chiloiro – fondly known as Chef Aldo – who prefers to use produce, ingredients and inspiration from his hometown of Taranta, Puglia, Italy.
What’s New?Sample a tantalising Parmiagiana di Melanzane ($22), an oven-baked appetiser coated with Parmesan, tomato sauce, thinly sliced eggplant and a generous sprinkling of melted mozzarella. New mains include the Merluzzo in Crosta di Patate ($35), oven-baked cod with spinach and tomato sauce and a crunchy potato crust. Or, you can savour the Ossobuco al Pomodoro ($39), cross-cut veal shank braised with vegetables, wine and broth, served with mashed potatoes and baby carrots.
