Layer a rice base, sprinkle a pie-chart of flavours on top, mix it up with chopsticks (so as not to mush up the rice) and devour. It’s a dish as simple as it is appetising, yet travellers to South Korea’s will discover that the humble bibimbop is an argument in a bowl.
Tales of the dish’s origins are as mixed as its toppings. Some claim it was a royal bite of choice in the early Joseon dynasty (1392–1897). Others say it was a harvest festival tradition, or that it evolved out of a dish called goldongban, a pot-luck meal eaten at lunar new year when pantries were being cleared out. But no one knows.
