Gajar Halwa
YOU NEED:
1tbsp ghee
2 cups carrots (crated)
3 cups whole milk
½ cup khoya
4 tbsp sugar
¼tsp green cardamom powder
8 -10 almonds (cut into slivers or flaked)
10 -12 raisins
YOU MUST:

Heat ghee in a heavy pan over low flame and add grated carrots. Sauté the carrots till soft.

Mix in remaining ingredients and when sugar dissolves, remove halwa from flame.

Serve hot or chilled.

Gently stir in milk and crumbled khoya and cook, stirring constantly till mixture thickens to the consistency of very thick kheer.
