You can’t beat a home-baked loaf of bread that’s fresh from the oven – so satisfying and utterly delicious. This loaf, made without yeast, doesn’t need proving or kneading, so is super quick and easy to make.

SODA BREAD

SERVED WITH SOUPS AND STEWS OR TOASTED FOR BREAKFAST, THIS RUSTIC LOAF IS AN ALL-AROUND WINNER

Serves 8 You will need

500g wholemeal or white plain flour, or 250g of each

100g butter or spread

2tsp bicarbonate of soda

1tsp salt

1tsp caster sugar

284ml carton buttermilk or milk with a squeeze of lemon juice

4tbsp milk

1 Heat the oven to 220C/Gas 7. Lightly flour a baking tray. Tip the flour into a bowl, add the butter and rub it with your fingers until the mixture resembles fine breadcrumbs. Stir in the salt, sugar and bicarbonate of soda.
