Mother's pride
Pistachio bundt cake
SERVES 8-10
Ingredients
250g butter, softened, plus a little extra for the tin
225g golden caster sugar
250g self-raising flour
60g ground pistachios
A pinch of salt
1 tsp baking powder
1 tsp pistachio essence
4 free-range medium eggs
For the icing
1-2 tbsp milk
180g icing sugar
50g chopped pistachios
1 tbsp of freeze-dried raspberries
1. Preheat oven to 180°C/ 160°C fan/gas mark 4. Butter a bundt tin (at least 2.5 litre capacity).
2. Beat the sugar and butter together, then add the dried ingredients, pistachio essence, and the eggs (one at a time) and beat until you have a smooth batter.
3. Spoon the batter into the buttered tin, then bake for 45 mins until a skewer inserted into the centre comes out clean.
4. Allow the cake to cool in the tin for 15 mins, then turn out on to a wire rack to cool completely.
