Biscuits and cookies are small, sweetened, cereal-based, baked products. They are broadly characterized by dough properties and then further classified by the process used to form and place them on the oven band. Cookie, English name, is derived from the Dutch word 'koekje' which means 'little cake'. Cookies are loaded with flavours and take more time to bake, because of the thick batter and dense ingredients that range between nuts, oats, chocolate chips and resins. They are generally moist and chewy in texture.
Softness of a cookie would depend on how long they have been baked. Cookies can be made with relatively soft dough that could be done with oatmeal or even chocolate chips. They could be refrigerated, or moulded, which would require stiffer dough. Rolled or pressed cookies need cookie cutters, which could result in different decorative shapes of cookies. Soft sandwich cookies could have sweeter fillings, including jam or vanilla icing. Decoration of cookies could include icing, which enhances their status as a confectionery.
