Some of the oldest and best-known natural foods are milk and milk products. In baking, milk, in any of its format fresh, condensed, or whole - is used not only to moisten batter or dough but also to add proteins, colour, and flavour to baked goods. While making the batter for a cake, milk is used to make the texture lighter and stronger as milk contains protein and lactic acid. Adding the right amount of milk keeps the cake from being dense.
