Dark chocolate mousse
The 100% dark chocolate in this easy mousse gives it a richness and texture that is second to none.
SERVES 4 PREP 20 MINS, plus chilling
400g fat-free Greek yogurt
4tbsp agave nectar
70g 100% dark chocolate, broken
100ml double cream
75g blueberries You will need: 4 serving glasses
1 Take the Greek yogurt out of the fridge 10 mins before to just come to room temperature. In a large bowl, mix the Greek yogurt and agave nectar.
2 Put the chocolate in a microwaveable bowl and melt for 30-second intervals, mixing, until smooth. Alternatively, place in a heatproof bowl over a pan of barely simmering water until melted.
3 Whisk the chocolate into the Greek yogurt mixture until fully integrated, then mix in the double cream.
4 Divide between four serving glasses and top with blueberries. Chill for 1 hr until set and serve.
