Hanging on the wall inside Le Veau d’Or (129 E. 60th St., nr. Lexington Ave.; lvdnyc.com), the octogenarian bistro that’s been refurbished and reopened by chefs Lee Hanson and Riad Nasr, is a copy of one of the first menus. It lists “Fresh frogs’ legs provençale” as part of the $3.75 prix fixe. Hanson, Nasr, executive chef Jeff Teller, and chef de cuisine Charlie Izenstein knew they wanted a version, and they opted for a butter-forward, bright-green persillade preparation (while saving the tomato-based Provençale approach for their escargots).
