Potato salad with crispy ham
SERVES 4
PREP & COOK TIME 40 MINUTES
1kg potatoes, peeled, coarsely chopped
1 tablespoon extra virgin olive oil
200g thinly sliced ham 3 spring onions, chopped finely
½ cup parsley leaves
½ cup (90g) cornichons, sliced lengthways
LEMON DRESSING
1 shallot, chopped finely
1 tablespoon Dijon mustard
¹⁄³ cup (80ml) lemon juice
2⁄³ cup (160ml) extra virgin olive oil
2 teaspoons honey
1. In a medium saucepan, cover potatoes with cold water and season with salt. Bring to the boil and cook over medium heat for 12 minutes or until just tender.
2. Heat olive oil in a large non-stick frying pan. Add ham and cook until crisp.
3. To make the lemon dressing, combine all the ingredients in a screw-top jar. Season well with salt and freshly ground black pepper. Shake until well combined.
