Stuffing and root vegetable hash
SERVES 4
This makes a delicious quick and easy breakfast for Boxing Day.
YOU WILL NEED
- 500g roasted root veg (potatoes, carrots, parsnips), mashed
- 300g leftover cooked veg (sliced sprouts, peas, cabbage), mashed
- 400g leftover cooked stuffing or sausages, roughly chopped
- 2tsp fresh thyme, leaves picked
- Zest of 1 lemon
- 1/2tsp smoked paprika
- Pinch of chilli flakes
- 2 eggs, beaten, plus 4 to serve
- 3tbsp olive oil
- 6 vine tomatoes, halved
HOW TO DO IT
1 Heat the to Mix Lall the veg with the stuffing, thyme, lemon zest, paprika, chilli flakes and beaten egg. Season well.
2 Heat 2tbsp oil in a large frying pan and fry the hash for 5 mins until golden. Flip over and fry for another 5 mins.
3 In another frying pan, the 4 eggs in the remaining oil and grill the tomatoes for 10 mins. Serve the hash with the fried eggs on top and the grilled tomatoes on the side.
TIP TO FLIP THE HASH OVER, COVER WITH A LARGE PLATE AND TURN THE PAN OVER CAREFULLY, THEN SLIDE THE HASH BACK INTO THE PAN TO FINISH THE OTHER SIDE.
