Lentil falafel burgers
SERVES 4
There's no shortage of flavour in these budget-friendly veggie burgers!
HOW TO DO IT
1 Heat the oven to 180C Fan/Gas 6. Spray a baking tray with low-calorie cooking spray. Whizz the oats in a food processor to a coarse flour and set side.
2 Pat the drained lentils with kitchen towel to remove any excess moisture, then put in a food processor with the onion, spinach, herbs, garlic granules and spices. Whizz to a coarse paste (you don't want it completely smooth) then scrape into a bowl, add the oats and mix well. Season with salt and pepper as needed.
3 Divide the mix into 4 pieces and shape into burgers, about 2cm thick. Put on a greased tray, spray the tops with cooking spray, and bake for 30 mins, flipping halfway, until golden and crisp.
4 To make the tzatziki, coarsely grate the cucumber and wrap it in a clean tea towel. Squeeze well, to remove as much liquid as you can. Put the cucumber into a bowl with the yogurt, harissa, mint and honey. Season and mix well.
5 To serve, split the wholemeal rolls in half and fill with the mixed salad, if using. Put a burger on top, add a dollop of tzatziki and serve.
