In a city where trends pop up and burn out faster than anyone can track, Cape Town restuarateur Peter Weetman breaks down how service plays the biggest part in establishing consistency.
THE FIRST MEAL I EVER HAD AT SOCIETI BISTRO took place in 2010. I was a student then, celebrating a friend’s birthday, and since we all had champagne tastes but Oros budgets, we figured: for once, let’s skip the post-club boerie roll and go somewhere really nice. I realised how nice it really was quite quickly when, while perusing the menu, I noticed the fine print at the bottom: ‘Please do not disturb our celebrity patrons.’ Where were we? I wondered. Who might we see?
We didn’t see anyone famous that night, but what I began to notice immediately was how unpretentious the atmosphere was. It’s the perfect backdrop for someone famous, infamous, or just the person next door to just relax and enjoy a meal. I caught up with owner and founder Peter Weetman to see how, in a city that loves a quick-burning trend, Societi has managed to remain a consistent local favourite. As he cooks up fresh ventures that are sure to stand taste tests and the more arduous test of time, he shares that the secret sauce in the recipe for success is service.
