Lentil & pickled fennel goat's cheese salad
SERVES 4
PREP+ COOK TIME 30 MINS
1 Place lentils and 3 cups (750 ml) cold water in a medium saucepan, bringing to the boil. Reduce heat to low. Cook, partially covered by a lid, for 12 minutes or until lentils are tender and water is absorbed. Remove from heat. Add 1 tablespoon of the oil. Season and cool. Stir in parsley.
