If your fridge is still groaning with Christmas goodies, get creative with these delicious dishes

Roast pork muffuletta
1. Barbecue or grill courgettes Luntil tender. Cool.
2. Combine ricotta, herbs bowl. Season.
3. Cut Cut a shallow lid from top of loaf. Remove soft bread from inside loaf, leaving a 2cm thick shell Spread dip all over the inside of the bread shell and lid.
4. Layer courgette, pork, ricotta mixture, and tomatoes three or four times inside bread shell. Press mixture down firmly and replace lid, pressing down firmly.
5. Tie loaf tightly with enclose in cling film. Refrigerate loaf for 2 hours or until ready to serve. Not suitable to freeze.
Lettuce wedges with cooked prawns & creamy lemon dressing
1. Place mayonnaise, sour cream, lemon rind, and juice in a medium bowl. Add spring onion, stirring to combine. Season.
2. Remove outer leaves from lettuce, trimming the root end. Cut each lettuce into quarters lengthways.
