Mac 'n' cheese
This crowd-pleaser, with the addition of ham, has never been easier to make.
PER SERVING 410 cals, 18g fat, 11g sat fat, 61g carbs
1 Cook the macaroni in a pan of boiling salted water for 4 mins. Add the broccoli and cook for a further 4 mins. Drain and set aside.
2 Melt the butter in a pan, and stir in the flour and mustard to make a paste. Cook for 1 min, stirring, then gradually add the milk. Slowly bring to the boil, stir in the soft cheese and simmer for 2 mins, until the sauce thickens.
3 Heat the grill to medium. Combine the ham, macaroni and broccoli with the creamy sauce. Check the seasoning, then transfer to the baking dish, top with the grated Cheddar and breadcrumbs, then grill for 4-5 mins until golden. Serve with peas.
COOK'S TIP
Go meat-free and omit the ham. To keep the same flavour, go for a smoked Cheddar, such as Applewood.
