Load up the freezer with these simple and delicious icy treats this festive season

ROCKY ROAD ICECREAM PUDDING

SERVES 10 PREP 15 MINS + OVERNIGHT FREEZING COOK 5 MINS

• 2 litres chocolate ice cream, softened but not melted

• 1 cup frozen raspberries

• 1/2 cup roasted salted peanuts, chopped

• 1/2 cup mini marshmallows 

• 133g Oreo biscuits, roughly chopped

• 100g white chocolate, melted

• chopped rocky road mallow biscuits, frozen cherries, for decoration

1 Lightly grease 10-cupcapacity freezer-proof bowl with cling film.

2 Scoop ice cream into a separate bowl, then fold in raspberries, peanuts, marshmallows and Oreos.

3 Pour rocky-road mixture into lined bowl, smoothing it with a spoon or spatula. Cover with plastic wrap and freeze for 4-6 hours or overnight.

4 To serve, carefully remove moulded ice cream from tin and remove cling film. Place pudding on a serving plate and pour over melted white chocolate, allowing it to drizzle down the sides. Serve with biscuits and cherries.
