For centuries, farmers in the English countryside have been rearing traditional cattle breeds such as Angus and Hereford, pig breeds such as English Large White, Pietrain, and Duroc, and sheep breeds such as Texel, Suffolk, and Charollais.

Bounty From Land & Sea

“In the United Kingdom, the animals are treated well,” says Susana Morris of Agriculture & Horticulture Development Board. “The sheep and the cattle are grass-fed, and there is no use of hormones by law.” Anti-biotics are used only when truly needed, for example, when an animal becomes ill. “We study the grasses, and find out which are more nutritious and contain more vitamins.” Depending on the type of grass fed to the cattle, the meat can range from lean to a little more marbled. “Consumers are realising that some fat is good, as the meat wouldn’t dry out so much when you cook it.” It also gives flavour to the meat.

To get a sense of Chef Aeron Choo’s work ethic as well as personality, we first have to tell the story of meeting her for the first time in her restaurant, Kappou Japanese Sushi Tapas Bar at Fortune Center. She’s working with her kitchen team, scrutinising the ingredients she has prepared, making sure that the slices of tuna she has made is up to scratch, prepping and discarding elements that she is dissatisfied with that don’t work with the dishes. Then, she pulls out a 1.7kg spiny lobster, fresh from the tank, and very much alive. When the lobster is clearly flailing from being yanked out of the tank it had been swimming in, she takes time to stroke, pet the lobster and whisper sweet nothings to calm the creature down.
