Twice-Baked Sweet Potatoes
-
This fall, think outside the pumpkin. There is a wide variety of produce available once the weather starts to cool – like sweet potatoes. Not only do they taste great, but they are a good source of fiber, Vitamin B, Vitamin C, and antioxidants. Don’t limit your possibilities to the traditional sweet potato casserole laden with marshmallows (though that is a favorite). Sweet potatoes are versatile in both sweet and savory dishes.
