Moussaka has a special place in Greek hearts. This is a dish made to share, a hearty and filling family favourite.

1.5kg Desiree potatoes, scrubbed
1/3 cup (80ml) extra virgin olive oil, plus extra to drizzle
1 tablespoon dried oregano
4 large eggplants (2kg)
2 medium onions (340g), chopped finely
4 cloves garlic, crushed
1kg minced lamb
1 large carrot (180g), chopped finely
1 large red capsicum (350g), chopped finely
3 cups (750ml) passata
1 tablespoon thyme leaves
200g fetta, crumbled
3/4 cup (75g) grated mozzarella
1/4 cup fresh oregano leaves (optional)
BÉCHAMEL
135g butter, chopped
1/2 cup (75g) plain flour
