Ginger marmalade glazed ham

PREP + COOK TIME 1 HOUR 45 MINUTES SERVES 12

365g ginger marmalade

½ cup grated fresh ginger

½ cup (80ml) maple syrup

½ cup (110g) firmly packed

light brown sugar

1 cup (250ml) blood orange juice

7kg cooked leg of ham

2 tablespoons cloves sprigs of fresh rosemary to decorate

1 Stir marmalade, ginger, maple syrup, sugar, and orange juice in a small saucepan; bring to a boil. Reduce heat to medium, then simmer, uncovered, for 10 minutes or until reduced by half.

2 Meanwhile, place oven shelf in lowest position. Preheat oven to 180°C/160°C fan.
