12 sheets filo pastry (see tips)

100g butter, melted

1 tablespoon icing sugar

BASE

12/3cups (250g) plain flour

¼ cup (55g) caster sugar

125g cold butter, chopped finely

1 egg

SPICED FRANGIPANE

1 cup (220g) caster sugar

21/2tablespoons plain flour

11/2cups (240g) natural almonds

1/2teaspoon ground cinnamon

1/2teaspoon ground cardamom

¼ teaspoon ground cloves

200g butter, chopped, softened

3 eggs
