Hummus and Vegie Festive Platter

1. Place sweet potato in a large bowl. Add oil and spice blend. Toss to coat. Spread over an oven tray lined with baking paper.

2. Cook in a hot oven (200C) for 30 to 35 minutes, or until tender and lightly browned. Remove. Cool.

3. To serve, spread hummus over a large platter. Arrange rows of sweet potato, avocado, combined peppers and olives, cucumber, and cheese on top of hummus. Serve with crackers. Garnish with micro herbs. 

TIP - Vary platter to taste. Try a different dip or add cherry tomatoes, marinated artichokes, vegie sticks, deli meats or different cheeses.

Chicken Involtini with Sage

1. Top each piece of chicken with 1-2 sage leaves and a slice of ham then cheese. Roll up and secure with toothpicks. Place on a tray. Cover and refrigerate for 30 minutes.

2. Place flour on a large plate. Season with salt and pepper. Toss chicken rolls in seasoned flour, shaking off excess.

3. Heat oil and garlic in a large, non-stick frying pan over medium heat until hot. Add remaining sage leaves. Cook, turning, until crisp. Remove. Drain on absorbent kitchen paper.
