SPAGHETTINI WITH GARLIC & CHILLI PRAWNS
SERVES 4 PREP 20 MINS COOK 10 MINS
1 In a large saucepan of boiling, salted water, cook pasta following packet directions. Drain. Return to pan. Set aside.
2 Meanwhile, in a large frying pan, heat oil on medium. Saute chilli and garlic 2-3 mins until tender. Increase heat to high. Cook prawns 3-4 mins until browned.
3 Add wine to pan. Cook 2-3 mins, stirring, until almost evaporated. Add stock. Cook, stirring, 2-3 mins until reduced by half.
4 Mix in tomatoes and spinach. Cook 4-5 mins until tomatoes begin to collapse.
5 Toss spaghettini through on low, 1 min. Season. Serve pasta with lemon wedges.
CHICKEN & FENNEL MEATBALLS WITH PAPPARDELLE
SERVES 4 PREP 25 MINS COOK 15 MINS
1 In a large bowl, combine mince, oregano, fennel seeds and garlic. Season. Roll into 1 tbsp-sized balls and place on a lined oven tray.
2 In a large, deep frying pan, heat oil on medium. Cook meatballs 4-5 mins, turning, until golden. Add wine. Cook 3-4 mins until almost evaporated. Stir in stock, passata and dried oregano. Simmer, covered, 10 mins.
3 Meanwhile, in a saucepan of boiling salted water, cook pasta following packet directions. Drain. Set aside.
4 Serve meatballs on a bed of pasta, sprinkled with parmesan and extra oregano leaves.
