Dirty fries

A chef’s guilty pleasure, which will no doubt become yours too. This one-tray winner is perfect for parties over the festive season.

SERVES 6

PREP 5 MINS

COOK 22 MINS

1 Heat a deep-fat fryer to 170C. Heat the oven to 180C Fan/Gas 6.

2 Fry the skinny fries for 8 mins until golden and crisp, then drain on kitchen paper.

3 Meanwhile, fry the bacon until crisp, then add the spring onions and peppers and cook for 3–4 mins, adding the Cajun seasoning for the final 2 mins.

4 Spoon the fries onto a baking tray, scatter over the bacon and spicy vegetables, top with the cheese, then bake for 10 mins until the cheese is hot and bubbling.

Per serving: 710 cals, 42g fat, 4g sat fat, 53g carbs.

TIP

You could cook the fries in an air-fryer if you have one, and feel free to experiment with the toppings.

Roasties

We all strive for the classic roast potato – crispy on the outside, soft and fluffy in the middle. These are truly worthy of a spot on your Christmas plate.
