Florentine pizza
Quick to prepare, and so much healthier than a takeaway.
SERVES 2 PREP 10 MINS COOK 15 MINS
✱ 2 wholemeal tortillas
✱ 2tbsp tomato puree
✱ 2 garlic cloves, crushed
✱ ¼ red onion, thinly sliced
✱ 30g artichoke hearts in brine, chopped
✱ 30g chestnut mushrooms, thinly sliced
✱ 2 slices prosciutto, torn
✱ 2 medium eggs
✱ 65g rocket
1 Heat the oven to 180C Fan/ Gas 6. Wrap the tortillas loosely in foil and warm in the oven for 5 mins. Unwrap and put on a foil-lined baking tray.
2 Mix the tomato puree and garlic together in a small bowl, and spread over the tortillas. Scatter over the onion, chopped artichoke, mushrooms and prosciutto, then crack an egg into the centre of each tortilla.
