Doorstep coronation chicken sandwiches

We’ve used a large loaf to create these satisfyingly large sandwiches, great for making something simple fit for a party.
HOW TO DO IT
Put the chicken breasts and peppercorns in a medium-sized pan, cover with the stock (top up with water to cover, if needs be). Bring to the boil then reduce to a simmer for 15-20 mins until cooked through. Remove the chicken from the stock, leave to cool, then shred into chunks.
Meanwhile, combine all the sauce ingredients together in a bowl, seasoning with salt and pepper. When the chicken has cooled, mix with the sauce. You can do this up to 2 days ahead and chill the sauce until you’re ready to make the sandwiches.
Butter the bread, spread 2 slices with the chicken mixture, then sprinkle with Bombay mix and coriander. Top with the remaining bread and cut each sandwich into 3. Serve on a platter.
