Beef and black bean burgers
SERVES 4
Using beans as well as mince makes these Mexican-inspired burgers healthier.
YOU WILL NEED
For the burgers:
1 red onion, quartered
1 medium carrot, roughly chopped
1 garlic clove
400g can black beans in water, rinsed and drained
1tsp dried oregano
½tsp ground cumin
1tbsp tomato purée
250g lean minced beef Spray oil
4 brioche-style burger buns, sliced
For the hot corn salsa:
200g tin sweetcorn, drained
1 red pepper, finely chopped
1 red onion, finely chopped
150g cherry tomatoes, quartered
Handful coriander leaves and stems,
finely chopped
Juice 1 lime
1tbsp finely chopped pickled jalapeños (optional)
HOW TO DO IT
1. Heat the oven to 200C Fan/Gas 7. In a food processor, whizz the onion, carrot and garlic until finely chopped. Add the beans, oregano, ½tsp salt and cumin. Pulse to chop up, but don’t completely blend.
2. Add the tomato purée and minced beef, then pulse again to bring the mixture together; don’t whizz too much otherwise you’ll end up with a paste.
3. Divide the mixture evenly into 4 and shape into burgers. Put onto a lined baking tray. Spray with oil and bake for 20 mins, turning halfway.
