Pastry chef Pooja Dhingra launches her third cookbook, and it’s completely eggless
When you’ve made macarons India’s favourite dessert and spent nine years running a beloved chain of pâtisseries and cafés, what do you do next? For Pooja Dhingra, head chef and founder of Le15 Pâtisserie and Café, the work of providing folks a piece of her “happy place”—in the form of dessert—is never done. She’s always up for a challenge, and her third book, Can’t Believe It’s Eggless, is the newest one. Bazaar talks to her about it.
When did you know that being a pastry chef was your passion?
I started baking for fun with my aunt when I was six. It wasn’t until I had gone to hospitality school in Switzerland that a light bulb went off and I realised that baking was my calling.
