WHICH MEAT?

A meatball can be made from any meat that can be minced – you can find versions using different types all over the world. For the classic Italian meatball, we suggest a 50/50 mix of beef and pork. The beef gives a big meaty flavour and the pork stretches it out and lightens it to create a more rounded flavour.

FAT EQUALS FLAVOUR

Fat is one of the key factors to ensure juicy meatballs. You need mince with 15-20% fat, or you can add fat and flavour by finely chopping smoked bacon or pancetta fat and putting it through your mince.
