Ahead Of The Times (D9 Cakery, Hilton Singapore)
For Hilton Singapore’s D9 Cakery, their chefs are always on the edge of innovation while still remaining sweet, something which is firmly believed by their Executive Pastry Chef Cindy Khoo. This year’s Christmas offerings include an earl grey tea and mango passionfruit Yule log which, along with their other log cakes, is innovative. Chef Khoo has taken the opportunity to design three unique, geometric prints that she reproduced on a chocolate cylindrical shell that encases the outside of the cake. The inside of the chocolate shell is filled with layers of fresh mango slices, passionfruit and gingerbread spice, made using Chef Khoo’s own gingerbread recipe.
“I have two other log cakes that have different exterior geometric prints, and all three were done using 3-D printing,” says Chef Khoo excitedly as she shows us her creations. “It’s neat and clean, and thanks to the chocolate shell, it increases the durability of the cake in between the time the cake is bought, to the time the cake reaches its destination.”

To get a sense of Chef Aeron Chooâs work ethic as well as personality, we first have to tell the story of meeting her for the first time in her restaurant, Kappou Japanese Sushi Tapas Bar at Fortune Center. Sheâs working with her kitchen team, scrutinising the ingredients she has prepared, making sure that the slices of tuna she has made is up to scratch, prepping and discarding elements that she is dissatisfied with that donât work with the dishes. Then, she pulls out a 1.7kg spiny lobster, fresh from the tank, and very much alive. When the lobster is clearly flailing from being yanked out of the tank it had been swimming in, she takes time to stroke, pet the lobster and whisper sweet nothings to calm the creature down.
