Gastronomical would be a techy enough word to describe Poco Loco, the latest tapas bar to achieve chemical fusion with Spanish and Mexican flair. This is a bar with experimental cuisine inspired by Latin American flavours and offerings of molecular concoctions whipped up by their mascot, Dr. Loco. This gastrolab has been designed by Deep Dodiya, architect/owner of ADD Design Studio who had a very clear brief from the client – a space that would reflect the aesthetic sense of a chemistry lab, which is further mirrored as a key feature in the molecular concoctions of food and drinks.
