MISO CARAMEL UPSIDE-DOWN CAKE

2½ cups (550g) caster sugar

2 tablespoons white (Shiro) miso paste

3 medium green apples (600g), peeled, cored, sliced into 1cm-thick rounds

300g unsalted butter, softened

1 teaspoon vanilla extract

2 cups (300g) self-raising flour

1 ” cup (80g) almond meal 5 eggs

½ cup (125ml) milk
