Spicy Buffalo
CHICKEN SALAD
SERVES 4. HANDS-ON TIME: 40 MINUTES.
TOTAL TIME: 55 MINUTES.
Spicy Buffalo chicken, sliced veggies, blue cheese and lettuce – yes, please! We use the OG Frank’s Red Hot, but go with any Buffalo sauce you like.
DRESSING
3 tbsp extra-virgin olive oil
3 cloves garlic, minced
½ cup avocado oil mayonnaise
1 tsp Dijon mustard
1½ tbsp apple cider vinegar
¼ cup chopped fresh parsley
3 tbsp chopped fresh dill
¾ tsp raw honey
1/8 tsp each sea salt and ground black pepper
BUFFALO SAUCE/CHICKEN
6 tbsp Buffalo hot sauce (TRY: Frank’s Red Hot)
4 tbsp organic unsalted butter
1 lb ground chicken, thoroughly patted dry
½ cup panko
½ tsp sea salt
¼ tsp ground black pepper
1 tbsp avocado oil
SALAD
7 oz chopped butter or iceberg lettuce (about 5 cups)
