OFF THE MENU

Thevar, a contemporary Indian restaurant and Meta, which serves primarily Korean fare, both Michelin restaurants, were next-door neighbours in Singapore. Their chefs, Mano Thevar and Sun Kim, became friends. One day, Mano Thevar narrates, that the middle of service where he has Roti Prata (a form of Indian flatbread) as part of his offering, chef Kim has called him and asked him to bring the prata. “He was making bulgogi. We actually went behind our restaurants – imagine two Michelin chefs in the middle of the road – and we tried my prata with his bulgogi. And it was perfect. That’s how Tambi’s menu was decided in 10 minutes,” Thevar recalls.
