Easy-going, imaginative, and humanistic, Remy Savage imbues enlightenment into his craft. Armed with a background in the history of art and philosophy, he is pushing the boundaries of mixology as he invites drink lovers to introspect on feelings and flavours, deepening the appreciation of cocktails beyond their base ingredients. Yet, by his own admission, his passion does not lie in bartending. "I like two things: making things and having happy people around me. It sounds cliché, but I have always loved the idea of service."
Early in his career, the 32-year-old brought his inventive point of view to Paris's Little Red Door as bar manager. There, he conceived The Evocative Menu, a veritable objets d'art. The menu presented a thick illustrated booklet with 11 charming visual representations of flavour profiles for each cocktail. Patrons could choose based on feeling over technical knowledge of taste combinations, with hidden flaps on each page revealing the contents of each drink.
Remy has also created similarly original menus, including The Menu of Applied Architecture, tying architectural ambitions such as Brutalism, Modernismo, Baroque, Minimalism, and Art Deco. The effort demanded six months from Remy's team, who had vested in learning architectural history by attending university courses, visiting museums, and speaking to architects.
