1 CURRIED CHICKEN AND APPLE SALAD SANDWICHES
For dressing: In a medium bowl, whisk together 1/4 cup each mayonnaise and sour cream, 1 tablespoon each lemon juice and cider vinegar, 2 teaspoons each curry powder and honey, 1/2 teaspoon kosher salt, and 1/4 teaspoon each black pepper and garlic powder.
For salad: Add 1/2 cups chopped cooked chicken; 1 sweet apple, such as Gala, Cortland or Honeycrisp, cored and chopped; 1/2 cup chopped celery; and 1/2 cup chopped lightly toasted pecans to the bowl with dressing. Stir to combine and coat. If you like, cover and chill up to 3 days.
For sandwiches: Spread Dijon mustard on 8 slices multigrain bread, toasted. Build 4 sandwiches with lettuce leaves, tomato slices and a scoop of chicken salad.
