LIGHT & TASTY CHICKEN

Mediterranean Chicken and Eggplant

SERVES 4-6 PREP & COOK 30 MINS 

1 Place chicken in a large bowl with 1 tblsp oil and 1 tblsp seasoning. Toss to coat. Season with salt and pepper.

2 Sprinkle both sides of eggplant slices with remaining seasoning. Drizzle with remaining oil. Season.

3 Heat an oiled, barbecue grill plate over a medium heat. Add chicken. Cook for about 8 minutes on each side, or until cooked. Remove. Rest, covered with foil for 5 minutes. Thickly slice chicken.

4 Meanwhile, add eggplant to same heated barbecue grill plate. Cook for about 5 minutes on each side, or until cooked. Transfer to a plate with chicken. Pour over juice.

5 Combine tomatoes and parsley in a bowl.

6 Spread dip over a serving board or platter. Drizzle with chilli sauce. Top with eggplant and chicken. Scatter over tomato salad. Serve with Lebanese bread.
