Food blogger Gaby Dalkin is pretty selective about which recipes end up in her regular rotation: "I want to cook things that are delicious, mostly balanced, colorful, healthy-ish and fun," she says. "And I want to get all the prep done in under 30 minutes now that I'm a mom!" While Gaby has been developing recipes for years (she started the blog What's Gaby Cooking in 2010), her latest cookbook, Take It Easy, is her first collection since giving birth to daughter Poppy in 2021. The recipes reflect her new, totally no-fuss approach to cooking. Try this dinner from the book: an easy salmon dish, a side of white beans and cookies for dessert!
Slow-Roasted Side of Salmon
Prep time: 15 min
Total time: 55 min
Serves: 4 to 6
1 2-pound center-cut side of salmon (skin removed)
Kosher salt and freshly ground black pepper
1 lemon, thinly sliced
1 orange, thinly sliced shallots, thinly sliced cup
3/4 Castelvetrano olives, pitted and halved cup extra-virgin olive oil
3/4 Fresh parsley, for serving Flaky salt, for serving
1 Dry off the salmon and season with kosher salt and pepper.
2 Preheat the oven to 275°. In a large, shallow baking dish, combine the lemon, orange, shallots and olives. Drizzle with half the oil and season with salt and pepper.
3 Place the salmon on top, and pour the remaining oil over the top.
4 Roast the salmon in the middle of the oven until tender and cooked through, about 40 minutes for medium rare.
5 Top the salmon with parsley and flaky salt before serving.
