Austria’s history with wine-making dates back to the Bronze Age, where evidence of preserved grape pips were found, indicating that viticulture practices existed then. With the Celts and the Romans lending their own knowledge to creating wines, wine making makes up a significant part of the country’s history.
Austria has four main wine growing regions that contribute to most of Austria’s wines: Lower Austria, Burgenland, Styria, and Vienna. Each of the regions showcase the great varied climate that Austria has to offer, which lends a hint to why Austria has great wines. The region’s climate, with warm, sunny summer and autumn days with northerly, cool nights are the key to the creation of fresh, aromatic wines with good body and fine character.

Wine Growing Region: Lower Austria
Niederösterreich, or Lower Austria, is Austria’s biggest wine-producing region. The region produces half of Austria’s total wine output and contains half of Austria’s wide variety of wine styles and types, growing grape varieties like Grüner Veltliner, Riesling, and indigenous grape varieties like the Zierfandler or Rotgipfler.

A Portrait Of The Chef As A Young Woman
To get a sense of Chef Aeron Choo’s work ethic as well as personality, we first have to tell the story of meeting her for the first time in her restaurant, Kappou Japanese Sushi Tapas Bar at Fortune Center. She’s working with her kitchen team, scrutinising the ingredients she has prepared, making sure that the slices of tuna she has made is up to scratch, prepping and discarding elements that she is dissatisfied with that don’t work with the dishes. Then, she pulls out a 1.7kg spiny lobster, fresh from the tank, and very much alive. When the lobster is clearly flailing from being yanked out of the tank it had been swimming in, she takes time to stroke, pet the lobster and whisper sweet nothings to calm the creature down.
