Brown butter loaf

SERVES 10 PREP+ COOK TIME 1½ HOURS (+ REFRIGERATION TIME)

Prepare the brown butter for the cake ahead of time as you will need to chill it until it sets.

  • 250g unsalted butter, chopped
  • 2½ cups (375g) plain flour
  • 1 tablespoon baking powder
  • 1½ cups (330g) raw caster sugar
  • 2 teaspoon vanilla bean paste
  • 3 eggs, beaten lightly
  • 1/2 cup (125ml) milk
  • salt flakes, for decoration

SALTED BROWN BUTTERCREAM ICING

  • 250g unsalted butter, chopped
  • 2 teaspoons vanilla bean paste
  • 11/2 cups (240g) icing sugar, sifted
  • 1/4 cup (60ml) warm milk
