Carbonara
SERVES 4 I could make this carbonara with my eyes closed. After a long day filming on ITV’s This Morning or writing recipes, I crave this smoky dish.
YOU WILL NEED
500g linguine or spaghetti ½tbsp olive oil 200g pancetta lardons or diced streaky bacon 1 garlic clove, crushed 100ml double cream or full-fat creme fraiche 2 egg yolks 60g Parmesan cheese, grated, plus extra to serve 2tbsp chopped flat-leaf parsley (optional) Sea salt and freshly ground black pepper
HOW TO DO IT
1. Cook the pasta in a large saucepan of salted boiling water for 9 mins or until the pasta is cooked. Drain, reserving half a cup of the pasta cooking water.
2. While the pasta is cooking, place a frying pan over a medium heat and add the oil. Stir in the pancetta, cook for 2 mins, then stir in the garlic and cook for a further minute.
3. In a bowl, whisk together the cream or creme fraiche, egg yolks and Parmesan.
4. Reduce the heat under the pancetta to low and stir in the creamy cheese mixture. Season with salt and pepper.
