From self-confessed clueless novice, who could barely follow a recipe, to champion of the Global Pastry Chef Challenge 2022, Dexter Lee's rise to global pastry acclaim has been a decade in the making. At 23 he began honing his craft as pastry commis at the Grand Hyatt Singapore, before moving three years later to JW Marriott South Beach Singapore to assume the role of assistant pastry chef.
It was here that Dexter's depth of knowledge and patience with colleagues earned him the reputation of being an excellent teacher, revealing his aptitude for education.
Shortly after, he took a leap of faith, pivoting into the role of Pastry and Baking lecturer at the Institute of Technical Education Singapore.
His unique approach combines the requisite technical skills to excel in a professional kitchen, with the mental resilience, courage and passion to thrive at the highest level.
Beyond the classroom, Dexter coaches those with an interest in the pastry competition scene to shine. And his winning streak is beginning to rub off on his pupils.
One of his greatest achievements is witnessing his students evolve and gain recognition for their skills. Recently, two of Dexter's proteges secured silver and bronze at Food and Hotel Asia 2022, Asia's leading F&B event.
