Japanese celebrity chef Nobu Matsuhisa is a seasoned globetrotter. Since Nobu began in 1994 in partnership with Hollywood actor Robert De Niro, the 73-year-old has overseen more than 50 Nobu restaurants serving his Japanese-Peruvian cuisine.
A Nobu restaurant opened at the Four Seasons Hotel in Singapore in June this year. In September, Matsuhisa was in town to host an omakase dinner and flew to Kuala Lumpur, where he has an outlet, for a day before flying back to cook at the Formula One Singapore Grand Prix.
A frequent flyer, Matsuhisa used to visit Los Angeles, London, and New York on the same day by Concorde, shuttling between his restaurants, checking the consistency of his dishes, and chatting with customers. “After working in London, I would fly to New York in the morning, arrive for lunch and leave for LA in the afternoon. I never thought about being tired. Jet lag is very normal for me,” he says with a chuckle.
